Domaine Valette, Réserve Particuliére Clos Reyssié, Pouilly-Fuissé, France 2006

There are many lovers of the famous Clos de M.Noly from the same producer, a wine which is aged for 7 years in barrel and has an incredible energy. This wine is made of 100% Chardonnay from one of the most famous vineyards of the Chaintré village and it is aged for 4 years in french oak barrels. The deep flavour of nuts and butterscotch mixed with citrus marmalade invades the palate lifted by a fresh acidity. This wine should be enjoyed at 12-14 degrees and not chilled.

For those who are looking for a red wine to match the Rabbit Pâté en Croute, I can strongly suggest this wine with plenty of soul, full of subtleties and at a really good price. This wine is made from Pinot Noir from a 1mier Cru vineyard on one of the best slopes of Savigny. It has a lively acidity, medium body and a perfect perfume of wild strawberries and rose petals mixed with forest floor. Serve in big Burgundy glasses and enjoy the trip.

This is a wonderful, dry wine full of character and personality that matches fantastically with rich and unctuous products. You will find almonds, tobacco flavours with a touch of caramel and vanilla. This sherry is very dry and has an electric acidity. Serve it at 15 degrees.

Paz Levinson works as consultant sommelier living in Paris. She started her wine career in her native Argentina, where she worked as head sommelier for a number of top-end restaurants, including Restó and Nectarine. She taught part-time at the Centro Argentino de Vinos y Espirituosas (CAVE) for five years and achieved her professional sommelier diploma from CAVE in 2006. At the same time she completed a BA in literature and she recently became the first Argentinean to pass the Court of Master Sommeliers’ Advanced Sommelier Certificate. Levinson was named Best Sommelier of Argentina 2014 and 2010 by the Argentinean Association of Sommeliers, and in 2015 she was winner at the Best Sommelier of the Américas in Chile. She has written for a number of magazines and sites including Guild Somm.
