Taste the Difference, Chardonnay, Limoux 2015
Jean-Claude Mas is a winemaker who knows a thing or two about how to get the best out of vines in this part of the world. In this case, low-yielding vines are fermented in stainless steel tanks to retain freshness, before being aged in oak for nine months to add richness. Creamy and buttery on the nose, with some ripe apple and tropical notes. There is a very creamy mouthfeel with good intensity, and vibrant apple fruit on the palate lends elegance and freshness. A good foody wine.
