Ignatius Chan

Ignatius Chan, judge on the DWWA Middle East, Far East, Asia and Spain panels in 2010

Ignatius Chan is a sommelier and restaurateur whose latest project was founding Iggy’s, located in The Regent Singapore, and whose wine list focuses on Pinot Noir. He joined the Mandarin Oriental Hotel in Singapore as a waiter in 1987 after graduation, and was later promoted to sommelier at the French restaurant, Fourchettes. In 1990, he won the Veuve Clicquot Champagne scholarship, as well as the prestigious Singapore Best Sommelier for French wines and spirits competition, before joining Raffles Hotel as cellar master in 1991. He helped set up Les Amis, which opened in 1994, before being selected as the only Asian member of the prestigious Grand Jury Européen in 1998, and then being voted (with his business partner Justin Quek) as Joint Food & Beverage Men of the Year 2000 by Wine and Dine magazine.
