Sunbury is a cool-climate wine region only now making waves thanks to producers reviving its ancient volcanic vineyards. This minimal intervention wine sees 40% whole-bunch fruit ageing for a year in neutral wood before a further 18 months in bottle. It has savoury, gentle plum fruits on a fresh, silky-textured palate.
