Aromatic white wine fans assemble; this fragrant Chilean treat is made from the Pedro Jimenez (also spelled Pedro Ximenez) variety, most frequently found in sweet fortified form in southern Spain. This, however, is crisp and dry, despite its flowery, tropical aromas and flavours. Think apple blossom, soft stone fruit, papaya and passionfruit . There's a grassy, elderflower scent too.
