Prović is pioneering this variety, Zlatarica, which only exists in the Neretva delta. The aromatics are breezy, with crushed seashell salinity and a fresh note of dried flowers and wild grasses. The palate is intensely mineral, and the reductive winemaking approach only heightens the sundried sea salt, smoky grilled lemon peel, and bright lime pith.
