Fans of Chablis will appreciate this fresh mineral wine from Cyprus. Sourced from some of Europe's highest vineyards, planted at 1,400m, the native Xynisteri grape (pronounced Sin-ees-ter-ee) offers vibrant aromas of zingy citrus, fresh peach and green herbs. The palate calls to mind fresh-sliced lemons squeezed over white stones; very crisp and clean with electrifying acidity. Oh-so-subtle wood influence (20% of the wine was matured in new oak for two months), adds texture and complexity alongside the stony minerality. A super wine.
