Czech sekt – bet you've never had that before! This 100% Pinot Noir spends a year on its lees, with a portion fermented and aged in 500-litre barrels before a second fermentation in bottle. With no dosage, it is bone-dry, smoky and mineral, with tart apple and citrus pith purity. Deliciously different.
