Domaine Jean-Philippe Fichet, Hautes-Côtes de Beaune, 2015

A pretty and expressive bouquet of lime zest and blossom introduces a juicy, nicely concentrated wine with lovely cut and intensity. Delicious already.

This has a bit more texture and give than the taut, focussed old vines Bourgogne blanc, but both are very chiseled wines. This has a bouquet of citrus zest, toasted wheat and oyster shell, with a long, mineral finish. As Jean-Philippe Fichet remarks, this is crying out for some seafood.
