Bruno Paillard's Rosé is predominantly first-press Pinot Noir, with some Pinot Noir red wine added along with an unspecified amount of Chardonnay for balance. For blending, the team utilise reserve wines stretching back to 1985, and the result is aged for 36 months on its lees then at least six months after disgorgement. This bottle, disgorged in January 2019, displays savoury red fruit flavours with a touch of apple and fresh bread. It has plenty of salinity which tightens everything up, and finishes clean and crisp with plenty of vibrant acidity. A lovely, delicate, measured pink Champagne.
