Vollenweider, Tschiel II Brut Nature, Mosel, Germany

This is a Blanc de Blancs made from Chardonnay and Pinot Blanc. Lemon and yeast make for a pure and lifted opening on the nose. The palate is ultra-light and comes with rather fine mousse. With its subtle slenderness, this is all about lemon and lightness with a super-dry finish. Full of vigour and vim, it cries out for seafood. Hello oysters and clams, hello ceviche. This is as uncompromising as it is elegant and pure. Full of tart citrus on the finish. Yum.
