Lifted hints of dried lemon and orange peel tinged with honey signal some post-disgorgement evolution. More air adds hints of juicy clementine. The palate is frothy and alive with citrus: think tangy tangerine and riper clementine. The finish is just as fruity but finishes on a beautiful, dry but very juicy note. Great as an aperitif, great with canapés, just made for a party – and it is vegan, too.
