Juhfark (pronounced 'you-fark' and translated as 'sheep's tail' for the shape of the bunches) is a white grape native to Hungary that's worth discovering. It's grown here on volcanic soils in Somlo by the Kolonics estate - Karoly Kolonics is a fourth-generation winemaker who has also planted Furmint, Harslevelu and Olaszrizling on his small estate. This rich and fully flavoured white gains texture from the 6-12 hours skin contact, and 11 months ageing in large oak and acacia barrels. Try decanting this and letting it develop in the glass, and enjoy the apple and white blossom flavours and spicy, mineral bite.
