Sauska, Furmint Brut, Tokaj, Hungary 2017

Sauska's Tokaji estate was founded in 2000, now dedicating 60% of its production to sparkling wines. The 2017 vintage of this Furmint Brut was sourced from its Tokaji vineyards but was vinified in its sparkling-production facilities in Budafok. Lemon sherbet, pear and green apple pervade the nose. Whole-bunch pressed, without oak treatment and malolactic fermentation, the limpid acidity sits high at 8.7g/l, rounded by the 7g /l dosage. Green apple, kiwi and lemon prevail, while the buttery depth and texture nod to five years of ageing on lees. Cleansing lime zest leads to a lingering, nutty finish.
