From vineyards at 210m above sea level, this wine has plenty of salinity and freshness, although it doesn't immediately deliver: you need to give it a good swirl and a little bit of time to extract the best from this. Preserved lemons and green apples emerge on the soft, creamy palate along with touches of melon, peach and even some yellow plum. The saline acidity really cuts through here, making it an invigorating glass to pair with baby octopus or aged hard cheese.
