Malibran, Credamora, Prosecco, 2014

Encouraged to referment in bottle and not in tank, this wine challenged my perception of Prosecco. The aromas and flavours are more saline than sweet, with an attractive yeastiness. Even more intriguing was the feel of the wine: it fans out on the palate to hit every tastebud. Excellent on its own, but unbelievable with a fish stew.
