Sparkling Ribolla Gialla may well be an unfamiliar concept, but don't let that put you off buying this charming fizz. Grown in northern Italy, the grape is typically fruit forward, light in body and has a good level of acidity, making it a great choice for sparkling wine. This spent 11 months on lees in the bottle, and is very dry with only 3g/L residual sugar. Clean and softly fruity, with juicy orchard fruit – yellow apple and pear – it's very easy drinking and would be delicious served with some salty prosciutto. A fun adventure in fizz.
