This wine feels quite young still, and the cool-ferment notes of pear drops are still prevalent, but it should open up to fuller citrus fruit flavours with more bottle age. Made by the family-owned Monte Schiavo, grapes come from the now-certified organic Coste del Molino vineyard, left unoaked to retain fruit purity and freshness. The racy acidity and clean, bone-dry palate makes it an ideal aperitif.
