This estate was bought by the Rossi Cairo family in 2003, who decided to convert it to biodynamic viticulture, and it's been Demeter certified since 2007. This is a fresh and vibrant wine, with fennel and fresh herb notes on the nose. The palate is zingy, with dashes of lime and salty minerality, leading to a bitter-edged, textured and grippy finish.
