From the Vajasindi estate in Castiglione di Sicilia on the north slope of Mount Etna, this new Etna project from Duca di Salaparuta produces a red and this white. Using naturally low production Carricante, the hand harvested fruit undergoes a pre-maceration on skins before gentle pressing and fermentation. Bright lemon and herb aromas are joined by a steely, very slightly saline character in the mouth, with fresh yet subtly textured lemon and apple flavours. Tight and stony, it relaxes on the finish with a fresh peachy note.
