Kanpai London, FIZU Sparkling Sake, Japan

This is a dry hopped, naturally fermented sparkling Sake 'made with a craft beer attitude' by the London-based Kanpai brewery. Perfumed nose of lemon soda, rosewater and soya on the nose. Slightly fizzy ('Fizu') on the dry palate of melon, fresh bread and grapefruit peel, with plenty of umami notes on the finish.
