Inspired by Burgundy, this Pinot from New Zealand's South Island was fermented with 25% whole-bunch fruit before ageing for 18 months in 25% new French oak sourced from Burgundian coopers. The result is a wine with lovely intensity, liquorice depth, vanilla highlights and woody breadth. Ripe cherry and raspberry fruits seep through all the gaps and fill out the palate with a subtle sweetness, leading to a chocolatey, vanilla-tinged finish. Try this with seared duck breast or venison.
