Radgonske Gorice, Untouched by Light, Methode Classique, Podravska, Slovenia, 2016

A traditional method sparkling wine harvested and made in darkness by Radgonske Gorice, which has a history of making sparkling wines in the northeast corner of Slovenia for 168 years. On the nose it features abundant freshness of citrus, pear and a distinct layer of bee wax, osmanthus blossom, with savoury biscuits and refreshing herbs to add complexity. Creamy, mouth filling bubbles are mingled with crisp grapefruit and honeyed yellow apple peels, plus hints of minty herbs to refresh, followed by a saline, yeasty long finish. The 2016 is the inaugural vintage of this wine. The producer advises drinkers to taste it in pitch darkness and in black glasses.
