The Semillon for this cuvée comes from a 4.2ha block of dryland bush vines planted in 1905 on granitic soils. Grapes (this vintage with just 2% Gris) were whole-bunch pressed and natural fermentation took place in Austrian oak foudres and Italian concrete eggs. Hauntingly fragrant lily of the valley is overlaid with citrus and pink grapefruit, followed by richer caramelised apples and earthy mushrooms. The sleek palate is deeply concentrated, with ripe peaches and sugared almonds, leading to a long, gravelly and saline finish.
