Hopefully grapes at De Morgenzon enjoy classical music, as baroque tunes are continually played at them in both vineyards and cellar to ‘maximise their potential’. Something must be going right – it’s a hugely attractive wine, fermented with wild yeasts and full of apple and citrus fruit and brisk acidity.
