Unirrigated Chenin vines averaging 30 years old produce the grapes for this wine. 24 hours of skin contact extract flavour and structure, and the juice was then pressed and racked into old oak for fermentation, followed by six months of maturation on the lees. Thanks to the thoughtful use of old oak, rather than new oak, the wine retains a fresh, mineral character with rich apricot flavours and a soft texture. It has great length which is enhanced by the high acidity.
