Dominio del Aguila’s Pícaro pink wine has been the perfect companion to my summer eating. Its Albillo Mayor is a year-round choice, and a keeper: white with texture, waxiness, nutty complexity, and a line of grapefruit freshness, drawing on Jorge Monzón’s experience in Burgundy. This is a great beginning for the Albillo Mayor variety in this northern region. Organic, foot-trodden, whole-bunch fermented over 10 months in neutral French oak, aged for 12-14 months without stirring or racking.
