Palo Cortado combines the best qualities of amontillado (dry, delicate, walnut skins, hints of flor) and oloroso (caramelly, rich, dried figs, more oxidised) in an intense, complex whole. This is beautifully concentrated with nutty, spiced fruitcake density and a long milk chocolate finish. Stock up for Christmas and serve slightly chilled as an aperitif or with cheese.
