Equipo Navazos, Colet Navazos Extra Brut, Penedès, 2014

A 100% Xarel-lo base wine sourced from Colet's vineyards in Penedès. After secondary fermentation in bottle, a blend of Amontillado and Palo Cortado is added as the liqueur d'expedition. This is bone dry and offers subtle yeasty notes on the nose of pastry and biscuit. Aged for 30 months, there's a nice complexity here, whilst that classic hint of rubber and earth from the Xarel-lo emerges. The palate is zesty and refreshing with a subtle tingle of oxidation coming through from the oxidatively aged Sherries.
