Saperavi is probably most closely connected with Georgian wine, but you can find examples today from as far afield as New York's Finger Lakes. This Ukrainian version features typically spicy dark fruits with bright and lively acidity, ending with a red fruit streak. It's slightly firm in the mouth, and drinking alongside a meal will help to soften up the tannins.; try with roast beef or grilled aubergine with spiced chickpeas.
