You may recognise the crayfish shown on the label – Candover Brook is said to be one of the few natural habitats of the rare English white-clawed crayfish. Aged for 42 months on lees with 3% reserve wine from a solera dating back to 2011, the 2018 vintage (the estate's maiden release) is richly autolytic on the nose, with notes of cream crackers and yellow fruits. The palate features mango cheesecake and toasty stone fruits, with an undertone of yellow apple, backed by a solid streak of acidity. Bitter almonds and citrus zest lead to a cleansing finish.
