Hidden Spring, Classic Cuvée, East Sussex, England, United Kingdom 2019

The base wine of the Classic Cuvée was partially aged in oak barrels, followed by full malolactic fermentation and four years on lees. Toasty red apple on the nose and palate, with savoury citrus notes. More red apple and cherry notes amidst a creamy mousse on a rounded, textured palate, balanced by a solid line of acidity. The fruits are sourced from a 13-acre (5.3ha) site in Horam, East Sussex, which was converted back to vineyards from a campsite in 2015.
