Sourced from a single vineyard in West Marden, West Sussex, the base wine was partially fermented in used French oak with full malolactic fermentation, followed by six months on lees before the second fermentation. Three years on lees in the bottle, the dosage sits relatively high at 10g/l to round off the high acidity (10g/l). Richly autolytic in style, featuring boiled golden apple and yeasty toast on the nose. Buttered lemon sherbet, creamy in texture with bright lemon curd and mango skin for depth. Ripe white fruits and roasted nuts on the finish.
