The onion pink colour of the sparkling rosé came from blending a dash of French oak-aged Pinot Noir. Creamy perfume of ripe peach, red cherry and strewed strawberry. More boiled red berries on the saline palate; yeasty red apple peel and white pepper-spiced grapefruit provide complexity, with bright acidity serving as the spine. Spiced nuts linger until the finish. Aged on lees for at least 36 months and finished with 5g/l dosage, balanced by 7.1g/l acidity.
