A sparkling red crafted with 100% Pinot Noir. Fermented on skins, the base wine went through partial ageing in French oak barrels before second fermentation in bottle. Ruby in colour; a sweet-spiced nose of candied red cherry, raspberry and a touch of boiled herbs. Frothy and vibrant with zingy acidity (7.1 g/l) on the palate. Red berries, confected dark cherry and smoky herbs lead to mineral depth and a pinch of peppery spices on the tip of the tongue, followed by a clean finish. A lovely companion to meat dishes garnished with fruit sauce. Enjoy slightly chilled.
