Pale lemon in colour with a golden hue, the 2017 Classic Cuvée features a generous nose of lemon sherbet, golden apple, and almond nougat with yeasty complexity. It boasts great depth and concentration on the palate, showcasing honeyed brioche and sweet spices, along with bruised apple, cinnamon pie, and lemon curd. The acidity is bright at 8.1g/l but is well-balanced by 6g/l dosage, leading to a satisfying and long finish. Fermented partially in French oak and aged for 36 months on lees.
