A blend of Seyval Blanc (85%) and Pinot Noir with 18 months of lees ageing, the sparkling 'Rhosyn' (the Welsh word for rosé) features sour red cherry on the nose. Crunchy red apple and blood orange are infused in the fine, toasty mousse, refreshed by round acidity, thanks to full malolactic fermentation and a dosage of 9.5g/l. A touch of brioche and red apple peel add depth, leading to a clean, nutty finish.
