A wild Riesling born of a shortage of bottles resulted in a half-barrel of leftover wine that was allowed to develop a flor yeast. Subsequent vintages have been added to create Oregon's (perhaps the world's) only solera-style Riesling. Oxidised and well beyond the ordinary, Death & Rebirth shows what's possible when you allow fate to guide you—aromas of peach skin, the subtle funkiness of Belgian Gueze, cheese rind and fresh mint. The palate is reminiscent of a freshly opened Cantillon. Briny, with flavours of Braeburn apple, spicy fermented notes and a textured finish.
